Healing Carrot and Parsnip Soup

This warming soup full of nourishing healing ingredients! Turmeric is anti-inflammatory and stimulates the immune system while the ginger supports healthy digestion and soothes. Give it a go!

Healing Carrot and Parsnip Soup

4 carrots 1 parsnip 3 garlic cloves 1 onion 1 tablespoon of coconut oil 500ml low sodium organic vegetable stock (you can just use water) 1 teaspoon turmeric powder Around 1 inch of fresh ginger ginger knob, peeled and grated ½ a lemon Pinch of cayenne pepper Salt and pepper to season


1)Preheat your oven to 180 degrees

2)Peel and roughly chop your onion, carrots and parsnip and put all of these into a roasting tray

3)Crush your garlic cloves and add these to the veg in the roasting tray

4)Add 1 tablespoon of coconut oil and 1 teaspoon of turmeric to the vegetables and mix well before putting in the oven for 20 minutes

5)In a medium size saucepan add the grated ginger, juice of 1/2 lemon and your vegetable stock, salt and pepper, bring to boil and then simmer

6)Add your roasted vegetables to the liquid and blend. I use my hand blender but any blender would work

7)Add more water depending on how smooth you like your soup
