Beetroot and Ginger Soup

This beetroot and ginger soup is just the thing you need to pick you up a bit! Beetroots are rich in nutrients and a great energy boost, the ginger fights inflammation and boosts the immune system!

Beetroot and Ginger Soup

1 tbsp of coconut oil 1 onion 2 inches of grated ginger 6 beetroot peeled and chopped into small cubes salt and pepper to taste Organic vegetable stock cube (optional, you can use just water if you prefer) 2 bay leaves


1)Heat up the coconut oil in a large cooking pot. To this add the onion and sauté until it becomes soft and translucence

2)Add the grated ginger and stir for a couple of minutes, adding your salt and pepper to taste at this time too

3)To this mixture add your chopped beetroot and mix altogether

4)Poor in your vegetable stock until all the beetroot is just covered in water, add the bay leaves at this time too

5)Once the mixture is boiling bring down to a simmer and cook until the beetroot is soft (approx 30 mins)

6)Then blend all the ingredients together using your preferred method, I use a hand held blender. You can add more water at this stage to achieve your preferred soup consistency!
